Spicy Hush Puppies with Jalapeno Honey Mustard Dip

Ingredients

  • 1 package Fleischmann's® Simply Homemade® Cornbread Baking Mix
  • 2/3 cup milk
  • 1/3 cup butter OR margarine, melted
  • 1 egg
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup finely chopped onions
  • 2 teaspoons finely chopped jalapeno peppers
  • 1/4 teaspoon cayenne pepper
  • 2 to 3 cups Mazola® Corn Oil
Jalapeno Honey Mustard Dip:
  • 1/4 cup jalapeno pepper jelly
  • 1/4 cup honey
  • 1/4 cup Dijon mustard

Directions

Combine cornbread mix, milk, butter and egg in a large mixing bowl with a spoon.  Stir until all ingredients are moistened.  Stir in cheese, onions, jalapenos and cayenne pepper.

Heat oil in a deep saucepan over medium heat to 350ºF.  Drop batter into hot oil using a small scoop or two spoons.  Fry hush puppies for 4 to 6 minutes, turning as needed,  until golden brown on all sides and cooked through.  Drain on rack or paper towel lined baking sheet.  It works best to only fry about 6 hush puppies at a time so that the oil temperature doesn't drop too much.  Repeat with remaining Hush Puppies.  Serve warm with Jalapeno Honey Mustard Dip.

To prepare dip, combine all ingredients in a microwave-safe bowl.  Microwave on HIGH (100%) at 20 second intervals stirring until well blended.
