This tasty and simple traditional Italian salad is a great way to use leftover bread!

Ingredients

  • 1/2 loaf prepared Fleischmann's® Simply Homemade® Italian Herb No Knead Bread Mix
  • 2 cups halved cherry tomatoes
  • 2 cups diced cucumber
  • 1/3 cup finely chopped red onion
  • 3 cups chopped romaine lettuce
  • 1/4 to 1/3 cup purchased Italian vinaigrette dressing

Directions

Cut bread into 1-inch cubes. Place in single layer on baking sheet and toast in a preheated 350° oven for 5 to 8 minutes, until firm. Combine bread cubes, tomatoes, cucumber, onion and romaine in large serving bowl and toss with dressing. Serve immediately. 

Recipe tip: Make your own simple salad dressing! Combine 1/3 cup red wine vinegar, 1 teaspoon sugar, 1 teaspoon basil, 3/4 teaspoon salt, 1/2 teaspoon minced garlic, 1/8 teaspoon black pepper and let sit for 5 minutes to develop flavors. Whisk in 1/2 cup extra virgin olive oil and use in place of prepared vinaigrette. Store extra dressing in a sealed container for up to one week.
