Orange Cranberry Poke Cornbread Coffee Cake

Ingredients

  • 1 package Fleischmann's® Simply Homemade® Cornbread Baking Mix
  • 2/3 cup milk
  • 1/3 cup butter OR margarine, melted
  • 1 egg
  • 1/2 cup dried cranberries
  • 1 tablespoon freshly grated orange peel
Topping:
  • 1/4 cup honey
  • 2 tablespoons orange juice
  • Powdered sugar for garnish
  • Additional freshly grated orange peel for garnish

Directions

Preheat oven to 375ºF.  Spray a 8 x 8-inch pan with cooking spray and set aside.

Combine cornbread mix, milk, butter and egg in a large mixing bowl with a spoon.  Stir until all ingredients are moistened.  Stir in cranberries and 1 tablespoon orange peel.

Pour batter into prepared pan.  Bake for 25 to 30 minutes or until wooden pick inserted in the center comes out clean.

Poke holes into cornbread almost to the bottom of the cake, every 1/2-inch using a small round object like a skewer or wooden pick.

Combine honey and orange juice, (Note: if not blending well, heat for 15 seconds in microwave.)  Pour glaze over warm cake, working back and forth to fill holes.  Some glaze should remain on top of cake.  Garnish cake with a sprinkle of powdered sugar and additional freshly grated orange peel.
