Ingredients

  • 1 package Fleischmann's® Simply Homemade® Cornbread Baking Mix
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/3 cup butter OR margarine, melted
  • 4 ounces (1 cup) crumbled feta cheese
  • 1/3 cup chopped kalamata olives
Optional, Red Pepper Coulis:
  • 1 jar (12 ounces) roasted red peppers, well drained

Directions

Preheat oven to 375ºF.  Spray a 8 x 8-inch baking dish with cooking spray and set aside.

Combine cornbread mix, sour cream, milk and butter in a large mixing bowl with a spoon.  Stir until all ingredients are moistened.  Stir in feta cheese and olives.

Pour batter into prepared pan.  Bake for 35 to 40 minutes or until wooden pick inserted in the center comes out clean.  Serve with Red Pepper Coulis, if desired.

To prepare Red Pepper Coulis, place well drained roasted red peppers in food processor.  Pulse until sauce is smooth.  Refrigerate until ready to serve.  Coulis can be prepared ahead.
