Tangy sweet little bars - perfect with coffee or hot tea, or a glass of cold milk!
Ingredients
- 1 package Simply Homemade® Greek Yogurt Lemon Poppyseed Muffin & Bread Mix
- 1 cup butter OR margarine, softened
- 4 eggs
- 1-1/2 cups sugar
- 1/4 cup freshly squeezed lemon juice (from 2 to 3 lemons)
- 1/4 cup all-purpose flour
- Powdered sugar
Directions
Preheat oven to 350°F.
Blend together muffin mix and softened butter in a medium mixing bowl.
Press mix into an ungreased 13 x 9-inch pan. Bake for 15 to 20 minutes, or until firm and golden.
In another bowl, whisk together the eggs, sugar and lemon juice until creamy. Add the flour and whisk until incorporated. Pour over the baked crust.
Bake for an additional 20 minutes. Let cool on a rack to room temperature, or for at least 30 minutes. Use a fine sieve to dust the bars with powdered sugar, then cover and chill in the refrigerator - the bars are much easier to cut when cold.
